What if Iris would have been the main love interest who was engaged to Noctis with her brother in the party? Personally, I feel the story would've had a lot more emotional depths( not saying that Luna didn't). But on the whole I don't think much would've changed. With Iris there, I feel it would've been a lot more powerful with both how Nocti and Gladio would have connected. How about you? What is your opinion?

I think It'd surely change the story. Noctis have been portrayed as something who is in pain that they are not together. That part would be harder to redo with this Iris. And something I don't feel would have strong need for the inner despair for noctis. I think that's one reason I'd say the canon story is better than the switch one.

I for one thought something would have happened or gone down when they met in Lestallum when she played a flirty fun girl with him and even bought him some toys.

Yes, Luna is kinda flat as a character in Final Fantasy 15- and she doesn't have many thoughts or feelings- and I am not sure if Noctis and Luna really have any love feelings for each other. I think Noctis and Iris have some good chemistry going on though in this scene !
